It's no secret that I like LOVE to bake. I first discovered this cookie about 7 years ago. I wanted to give something special to each of my boys' Godmothers for Christmas. At the time we did not have a lot of money. I had just left my job and my husband was working two jobs so I could stay home with the kids. I decided to make them each a fun variety of holiday cookies. I came across this recipe in a Pillsbury Cookie Cookbook. It was a bake-off favorite, and I can see why! To this day when I make these cookies, people are surprised by the Andes Mint stuffed in the middle. It is a fun twist on a rather plain looking cookie. Mint Surprise Cookies Original Recipe from Pillsbury Best Cookies CookbookPrep time 30 minutes (including chilling dough)1 cup sugar 1/2 cup firmly packed brown sugar 3/4 cup of butter, softened2 Tbs water1 teaspoon vanilla2 eggs 3 cups of flour1 teaspoon baking soda1/2 teaspoon salt1 package of Andes Mintschopped walnutsCream butter and sugars togetherAdd water, vanilla and eggs, mix wellSift together flour, baking soda, and saltSlowly add dry ingredients to the wet ingredientsRefrigerate for approximately 20 minutes until dough is easy to handlePreheat oven to 375 degreesUnwrap Andes mintsCover mints with cookie doughPlace on a parchment lined cookie sheetTop each cookie with walnut piecesBake for 8-10 minutes until golden brown Cool on cookie sheet for 1 minute, remove to cooling rack to complete cooling.
