Toffee Pumpkin Cookies

Moist and delicious Toffee Pumpkin Cookie great for Halloween parties!

Each year, I try to think of something different to send in for the boys'
Halloween parties at school. They only have a short time to have the party, so
most of the thing that are sent in end up getting put into bags to take home.

This year, I decided to make cookies...big surprise!!

I decided rather than send in a plate of cookies, I would wrap the cookies in an individual treat bag, and tie it with an orange ribbon. Make these treats, and your
teachers will thank you later.  Passing out treats will be simple and
they are already pre-packaged to go home!

I adapted this recipe from Nestles

1 1/4 cups of bread flour
1/2 teaspoon baking soda
1/2 teaspoon baking
powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
(or pumpkin pie spice)
1/4 teaspoon of salt
1/2 stick of butter,
softened
1 1/4 cups sugar
1/2 cup of Libby's 100% pure pumpkin
1
egg
1 teaspoon pure vanilla
1 cup of toffee pieces

Preheat oven to
350 degrees
In a separate bowl, sift dry ingredients together and set
aside
Cream butter and sugar together
Add pumpkin egg and vanilla mix
well
Slowly mix in dry ingredients
Stir in toffee pieces
Place dough
in the refrigerator for 10 minutes
Line cookie sheet with parchment
paper
Roll teaspoon size dollop of dough into a ball, place on cookie
sheet
Bake for 10-12 minutes until edges are brown
Cool on cookie sheet
for 2 minutes, transfer to a cooling rack to complete cooling.

Once cookies are completely cooled, place in treat bag and tie with ribbon.
